Sea Urchin Spaghetti

Sea Urchin Spaghetti

  • 600g Spaghetti pasta
  • 60-70 fresh sea urchins
  • 2 garlic cloves
  • extra virgin olive oil
  • ½ cup white wine
  • Salt and white pepper to taste
  • a bunch of parsley, minced


Open the sea urchin, spoon out the meat inside and put it into a bowl.

Set the pasta water to boil, and when boiling cook the pasta.

Peel the garlic and crush it slightly. Saute it gently in abundant oil until a light gold colour, add some spoons of sea urchin meat to the oil and garlic an saute gently, deglaze with wine and remove from heat.

Cook the pasta al dente then drain it and place in a serving bowl.

Add the sea urchin sauce and mix well.

Add the remaining sea urchin meat, a sprinkle of parsley and serve.
